Just like a torque wrench, you set it for the inch-pounds you want, and it clicks when you reach it.
I use 7 inch-pounds on these CB550 carbs' float bowl screws. You know why. They pull threads pretty easily.
There are literally dozens of different manufacturers of these things, I was surprised to learn. Never knew about them before but glad I found out.
